Ingredients

– 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
– 1/4 cup olive oil
– 4 cloves garlic, minced
– 1/2 cup grated Parmesan cheese
– 1 tablespoon fresh parsley, chopped
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions

1. Prepare the Marinade:

– In a large bowl, combine olive oil, minced garlic, grated Parmesan cheese, chopped parsley, Italian seasoning, salt, and pepper. Mix well to create a marinade.

2. Marinate the Chicken:

– Add the cubed chicken to the bowl with the marinade. Toss until all pieces are evenly coated.
– Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

3. Preheat the Grill:

– Preheat your grill to medium-high heat.

4. Assemble the Skewers:

– Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

5. Grill the Skewers:

– Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).

6. Serve:

– Remove the skewers from the grill and let them rest for a few minutes before serving. You can sprinkle additional Parmesan cheese and parsley on top for extra flavor.
