• 1 lb ground beef
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 packet taco seasoning (or 2 tbsp homemade)
• 1 cup tomato sauce
• 1/2 cup salsa
• 2 cups cooked white rice
• 1 cup canned black beans, drained and rinsed
• 1 cup corn kernels (fresh or frozen)
• 1 1/2 cups shredded cheddar cheese
• 1 cup diced tomatoes
• 2 tbsp chopped green onions
• 2 tbsp fresh cilantro, chopped
• Salt and pepper, to taste
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.
Add garlic and cook 30 seconds until fragrant. Stir in taco seasoning, tomato sauce, and salsa. Simmer 3–4 minutes.
Remove from heat and mix in cooked rice, black beans, and corn. Season with salt and pepper if needed.
Transfer mixture to the prepared baking dish and spread evenly.
Top with shredded cheddar cheese. Bake for 15–20 minutes until cheese is melted and bubbly.
Remove from oven and garnish with diced tomatoes, green onions, and fresh cilantro before serving.
