2 large sweet potatoes, sliced into rounds
2 tbsp olive oil

¼ cup crumbled feta cheese
2 tbsp honey
1 tbsp chopped fresh parsley (or thyme)
Preheat oven to 200°C (400°F) and line a baking sheet.
Toss sweet potato rounds with olive oil, salt, pepper, and paprika.
Arrange in a single layer and roast for 25–30 minutes, flipping halfway, until tender and caramelized.
Transfer to a serving plate and sprinkle with crumbled feta.
Drizzle generously with honey and garnish with fresh herbs.
