Ingredients

For the Chicken:
• 2 lbs boneless, skinless chicken thighs or breasts
• 1 ½ cups pineapple chunks (fresh or canned)
• 1 red bell pepper, diced
• 1 yellow bell pepper, diced
• ½ cup onion, chopped

For the Sauce:
• ½ cup soy sauce (low sodium recommended)
• ½ cup brown sugar
• ½ cup pineapple juice (reserved from canned pineapple or fresh)
• 2 garlic cloves, minced
• 1 tbsp ginger, grated
• 2 tbsp ketchup
• 1 tbsp rice vinegar
• 1 tbsp cornstarch mixed with 2 tbsp cold water (for thickening)

Instructions

1. Prepare the Chicken and Vegetables:
Add the chicken thighs (or breasts), pineapple chunks, diced bell peppers, and onion to the crockpot.
2. Make the Sauce:
In a bowl, whisk together the soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, ketchup, and rice vinegar until well combined.
3. Cook:
Pour the sauce over the chicken and vegetables in the crockpot. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
4. Thicken the Sauce (Optional):
About 30 minutes before serving, stir in the cornstarch slurry to thicken the sauce.
5. Serve:
Serve over steamed rice and garnish with green onions or toasted sesame seeds for an extra burst of flavor.

• Fresh cilantro for a fresh finish
