This Smoky Crockpot Chicken Sandwich recipe is perfect for a simple yet satisfying meal. The chicken slowly cooks in a flavorful barbecue sauce with spices that create a rich smoky taste. After cooking, the chicken becomes tender enough to shred easily, making it ideal for sandwiches or wraps. It’s a great recipe for family meals, gatherings, or casual dinners. The slow cooker does most of the work, allowing the flavors to blend beautifully while keeping the chicken juicy.

Ingredients

Scale

4 boneless, skinless chicken thighs or breasts

1 cup Sweet Baby Ray’s barbecue sauce

½ cup chicken broth

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon black pepper

1 tablespoon brown sugar

1 small onion, chopped

4 sandwich buns

Optional: coleslaw for topping

Instructions

Place the chopped onion in the bottom of the crockpot.

Arrange the chicken pieces over the onion.

In a bowl, combine the barbecue sauce, chicken broth, smoked paprika, garlic powder, onion powder, black pepper, and brown sugar.

Mix well until the sauce is smooth.

Pour the sauce mixture over the chicken, ensuring all pieces are covered.

Cover the crockpot with the lid and cook on low for 5–6 hours or high for 3–4 hours.

When the chicken is fully cooked and tender, shred it with two forks directly in the sauce.

Stir the shredded chicken so it absorbs the sauce.

Spoon the chicken onto sandwich buns and add coleslaw if desired.

Serve warm and enjoy a flavorful homemade barbecue sandwich.
