2 cups mixed greens (lettuce, arugula, spinach)
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
½ cup feta cheese, crumbled
¼ cup red onion, thinly sliced
½ cup fresh mango or peaches, diced
¼ cup toasted nuts (almonds, pecans, or walnuts)
Dressing:
3 tablespoons olive oil
1 tablespoon balsamic vinegar or lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard
Salt and pepper, to taste
In a large bowl, combine mixed greens, tomatoes, cucumber, feta, red onion, fruit, and toasted nuts.
In a small jar, whisk together olive oil, balsamic vinegar (or lemon juice), honey, Dijon mustard, salt, and pepper.
Drizzle the dressing over the salad just before serving.
