Steak with Potatoes

1 pound sirloin steak, cut into bite-sized pieces (about 1-inch cubes) – sirloin is wonderfully tender!
* 1 pound small red potatoes, quartered (no need to peel if you like the skins!)
* 4 tablespoons unsalted butter
* 4 cloves garlic, minced (or more if you’re a garlic lover like me!)
* 1 tablespoon olive oil
* 1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)
* Salt and freshly ground black pepper, to taste
* Fresh parsley, chopped, for garnish (optional, but it adds a lovely touch!)

Instructions

In a medium bowl, toss the quartered potatoes with 1 tablespoon of olive oil, half of the rosemary, salt, and pepper. Make sure they’re nicely coated.
2. **Cook the Potatoes:** Heat a large oven-safe skillet over medium-high heat. Add the seasoned potatoes in a single layer. Cook for about 10-12 minutes, flipping them occasionally, until they’re golden brown and tender. If your skillet isn’t oven-safe, you can transfer them to a baking dish after browning.
3. **Sear the Steak:** While the potatoes are cooking, pat your steak pieces dry with a paper towel. Season them generously with salt and pepper.
4. **Butter and Garlic Bliss:** Once the potatoes are almost done, push them to one side of the skillet. Add the remaining 3 tablespoons of butter to the empty side. Once melted and bubbly, add the minced garlic and the rest of the rosemary. Cook for about 30 seconds until fragrant – be careful not to burn the garlic!
5. **Bring it All Together:** Add the seasoned steak pieces to the skillet with the garlic butter. Cook for 3-5 minutes, stirring occasionally, until the steak is browned and cooked to your liking. The garlic butter will start to coat everything beautifully!
6. **Serve and Enjoy!** Give everything a good stir to combine the steak, potatoes, and delicious garlic butter sauce. Sprinkle with fresh parsley if you’re using it.
