2 chicken breasts, diced
1 red bell pepper, chopped
1 green bell pepper, chopped
½ onion, sliced
2 cloves garlic, minced
1 tbsp chili flakes (plus more for garnish)
2 tbsp soy sauce
1 tbsp honey
Salt & pepper, to taste

For the bowl:
1 cup cooked white rice
½ avocado, sliced
¼ cup sweet corn

Marinate the chicken: In a bowl, mix diced chicken with soy sauce, honey, garlic, chili flakes, salt, and pepper. Let sit for 10 minutes.
Sauté the chicken: Heat olive oil in a large pan over medium heat. Add the chicken and cook for 5–6 minutes, until golden and cooked through.
Cook the veggies: Add onions, green and red bell peppers to the same pan. Sauté for another 5 minutes until slightly soft but still vibrant.
Assemble the bowl: In a deep serving bowl, add a mound of white rice. Arrange sautéed chicken and peppers next to it.
Add the toppings: Place sliced avocado, sweet corn, and shredded greens beside the rice. Sprinkle with extra chili flakes for heat.
