Shrimp & Rice Bowl with Pineapple Salsa: A Fresh and Flavorful Lunch Option

1/2 lb large shrimp
1 cup Jasmine rice
1/2 tsp Old Bay seasoning
1 tsp onion powder
1 tsp garlic powder
Salt and pepper
Olive oil
1 avocado
Pineapple Salsa:
1/3 pineapple, diced
1/4 red onion, diced
1 Roma tomato, diced
1/4 cup cilantro, chopped
Juice of 1 lime
Salt, pepper, and red pepper flakes to taste

Instructions

1. In a bowl, mix shrimp with olive oil, garlic powder, onion powder, Old Bay, salt, and pepper.
2. Preheat air fryer to 380°F. Air fry shrimp for 6 minutes, flipping halfway.
3. Mix pineapple, red onion, cilantro, tomatoes, lime juice, salt, pepper, and red pepper flakes for the salsa.
4. To assemble, add rice, shrimp, pineapple salsa, and avocado slices.
5. Drizzle with avocado crema (blend avocado, Greek yogurt, cilantro, green onion, lime, salt, olive oil, and water).
