Pineapple Kiwi Salad

Ingredients

¼ cup shredded coconut
1 large fresh pineapple, cubed
4 kiwis, peeled and sliced
8-10 fresh mint leaves, thinly sliced (julienned)
2 limes, zested and juiced
2 tablespoons honey

Instructions

1️⃣ Toast the Coconut:

In a skillet over medium-low heat, add shredded coconut.
Stir frequently and toast until lightly browned (about 3-5 minutes).
Remove from heat and set aside.
2️⃣ Prepare the Fruit:

Cube the pineapple and place it in a large bowl.
Slice each kiwi in half, scoop out the fruit, and cut into bite-sized pieces.
Thinly slice (julienne) the mint leaves and add to the bowl.
3️⃣ Make the Dressing:
In a small bowl, combine lime zest, lime juice, and honey.
Whisk until smooth, then pour over the fruit and toss to coat.
4️⃣ Chill & Serve
