  • 4boneless pork chops
  • 1 tbspolive oil
  • Salt and black pepper, to taste
  • 1/2 tsppaprika

For the Pineapple Ginger Sauce

  • 1 cuppineapple chunks
  • 1/3 cuppineapple juice
  • 2 tbspsoy sauce
  • 2 tbsphoney or brown sugar
  • 1 tbspfreshly grated ginger
  • 3garlic cloves, minced
  • 1 tbsprice vinegar or lime juice
  • 1 tspcornstarch mixed with 1 tbsp water, optional
  • 1 tbspchopped fresh parsley or green onions, for garnish

Instructions

  1. Season the pork chops:Pat the pork chops dry with paper towels. Season both sides with salt, black pepper, and paprika.
  2. Sear the pork:Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes per side, until nicely browned. Transfer to a plate.
  3. Prepare the sauce:In the same skillet, add the garlic and grated ginger. Cook for about 30 seconds until fragrant. Stir in the pineapple chunks, pineapple juice, soy sauce, honey, and rice vinegar.
  4. Simmer the sauce:Let the mixture simmer for 3–4 minutes, stirring occasionally. For a thicker glaze, add the cornstarch slurry and cook briefly until the sauce becomes glossy.
  5. Finish cooking the pork:Return the pork chops and their juices to the skillet. Spoon the pineapple ginger sauce over the meat and simmer gently until the pork reaches an internal temperature of 145°F (63°C). Let the chops rest for at least 3 minutes before serving.
  6. Garnish and serve:Sprinkle with fresh parsley or sliced green onions. Serve the pork chops with rice, roasted vegetables, or mashed potatoes, spooning extra pineapple ginger sauce over the top.
