Pan-Seared Steak in Butter Sauce – Juicy and Flavorful
- 2boneless ribeye or sirloin steaks, about1inch thick
- 2 tbspolive oil
- 3 tbspunsalted butter
- 4garlic cloves, lightly crushed
- 3sprigs fresh thyme or rosemary
- 1 tspgarlic powder
- 1/2 tsppaprika
- Salt and freshly ground black pepper, to taste
- 1 tbspchopped fresh parsley, for garnish
- Prepare the steaks:Pat the steaks dry with paper towels. Season both sides generously with salt, black pepper, garlic powder, and paprika.
- Heat the skillet:Place a heavy skillet, preferably cast iron, over medium-high heat. Add the olive oil and heat until shimmering.
- Sear the steaks:Place the steaks in the hot skillet and cook undisturbed for 3–5 minutes per side, depending on thickness and desired doneness. Adjust the cooking time as needed.
- Add the butter and aromatics:Reduce the heat to medium-low. Add the butter, crushed garlic, and fresh thyme or rosemary. Allow the butter to melt and become fragrant.
- Baste the steaks:Tilt the skillet slightly and spoon the melted garlic butter over the steaks repeatedly for 1–2 minutes, until they reach your preferred doneness. For food safety, whole beef steaks should reach at least 145°F (63°C), followed by a 3-minute rest.
- Rest the meat:Transfer the steaks to a cutting board and let them rest for 3–5 minutes so the juices redistribute.
- Serve with butter sauce:Slice the steaks against the grain if desired. Spoon the garlic herb butter from the skillet over the top and garnish with fresh parsley. Serve immediately with mashed potatoes, roasted vegetables, or a crisp salad.
