Easy & Delicious Mexican Chopped Cheese Sandwich Recipe

Ingredients

• 3 hoagie rolls
• 2 tablespoons butter, softened
• 1/4 cup mayonnaise
• 1 pound ground beef
• 1 teaspoon salt
• 1 tablespoon chili powder
• 3 tablespoons chopped chipotle peppers in adobo sauce
• 6 slices pepper jack cheese
• 1 cup shredded lettuce
• 1 cup Pico de Gallo

Instructions

1. Heat a large skillet over medium-high heat.
2. Spread butter on the hoagie rolls and toast them in the skillet until golden brown. Spread mayonnaise on the inside of each roll and set aside.
3. Add the ground beef to the skillet and cook, breaking it up into small crumbles as it browns.
4. Stir in the salt, chili powder, and chopped chipotle peppers. Mix well and cook for another 2–3 minutes.
5. Divide the meat mixture into 3 portions in the skillet and shape each into the length of a hoagie roll.
6. Top each portion with 2 slices of pepper jack cheese. Cover the skillet for 1 minute or until the cheese melts.
7. Carefully transfer the cheesy beef mixture onto the toasted rolls.
8. Top with shredded lettuce and Pico de Gallo.
9. Serve immediately and enjoy!
