2 large sweet potatoes, sliced into ½-inch rounds
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp dried oregano or Italian seasoning
1 cup burrata cheese, torn into pieces
½ cup roasted butternut squash or diced roasted vegetables
1 tbsp honey (optional)
1 tbsp balsamic glaze
1 tbsp sesame seeds or crushed nuts (optional)
Fresh basil leaves, chopped
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Arrange the sweet potato slices on the baking sheet and brush with olive oil. Season with salt, pepper, and oregano.
Roast for 18–20 minutes until tender and lightly caramelized.
Remove from the oven and top each sweet potato slice with a generous spoonful of burrata cheese.
Add roasted diced vegetables on top of the burrata.
Drizzle with olive oil, honey, and balsamic glaze for extra flavor.
Sprinkle with sesame seeds and fresh basil before serving.
