1 lb ground chicken
1/2 cup breadcrumbs
1/3 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 egg, lightly beaten
3 cloves garlic, minced
1/2 small onion, finely diced
1 tsp Italian seasoning
Salt and pepper to taste
2 tbsp fresh parsley, chopped
1 tbsp olive oil
For the Garlic Parmesan Topping:
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
2 tbsp melted butter
1 clove garlic, minced
1. Preheat the oven to 375°F (190°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, mozzarella, beaten egg, garlic, onion, Italian seasoning, salt, pepper, and parsley. Mix gently.
3. Shape the mixture into a loaf and transfer it to the prepared pan or baking sheet.
4. In a small bowl, combine the topping ingredients and spread over the meatloaf.
5. Bake for 35-40 minutes or until the internal temperature reaches 165°F (74°C).
6. Let rest for 5 minutes, slice, and serve.
