1 cup fresh spinach, washed and chopped
2 large eggs, beaten
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
Salt and pepper to taste

Preheat the oven to 375°F (190°C).
In a large bowl, whisk the beaten eggs, garlic powder, dried oregano, salt, and pepper together until well combined.
Add the chopped spinach to the bowl and mix until the spinach is fully coated.
Line a baking sheet with parchment paper or spray it with olive oil. Spoon out small dollops of the spinach mixture onto the sheet, creating little mounds.
Sprinkle crumbled feta cheese on top of each mound.
Bake for 12-15 minutes, or until the edges are golden brown and crispy.
