Everything you love about a classic bacon cheeseburger — wrapped in a burrito! This hearty, cheesy burrito is stuffed with seasoned beef, crispy bacon, and melty cheese, then finished with a warm creamy cheese drizzle. It’s bold, filling, and pure comfort food.
1 lb (450g) ground beef
6 strips cooked bacon, crumbled
1 cup shredded cheddar cheese
½ cup diced pickles
½ cup diced tomatoes
1 small onion, finely chopped
4 large flour tortillas
¼ cup mayonnaise
2 tablespoons ketchup
1 teaspoon mustard
Cheese Sauce:
1 cup heavy cream
1 ½ cups shredded cheddar
Salt and pepper to taste
In a skillet, cook ground beef and onions until browned. Drain excess fat. Stir in ketchup, mustard, and mayonnaise.
Warm tortillas and fill each with beef mixture, bacon, cheese, pickles, and tomatoes. Roll into burritos.
To make cheese sauce, heat cream in a saucepan until hot (don’t boil). Stir in cheddar and whisk until melted and smooth. Season with salt and pepper.
Place burritos on a baking sheet. Pour cheese sauce over each and broil for 2–3 minutes until bubbly.
Serve hot with a side of fries or a crisp salad.
Pro Tip: Add jalapeños or hot sauce for a spicy kick
