Easy Leftover Salmon Hash with Sweet Potato and Herbs

Ingredients

Salmon:

1 salmon fillet

1 tsp olive oil

Salt & black pepper to taste

½ tsp paprika or garlic powder

1 lemon slice (for topping)

Herbed Rice:

½ cup cooked white or brown rice

1 tbsp chopped tomato

Pinch of dried herbs (parsley or oregano)

Salt to taste

Sweet Potato Fries:

1 medium sweet potato, cut into fries

1 tsp olive oil

½ tsp paprika

Salt to taste

Veggie Side:

½ cup zucchini & yellow squash, sliced

1 tsp olive oil

Pinch of salt & pepper

Instructions

Bake sweet potato fries at 400°F (200°C) with olive oil, paprika, and salt for 25–30 minutes until golden and crisp.

Season and sear salmon in a skillet with olive oil over medium heat, 3–4 minutes per side until flaky. Top with lemon slice.

Warm the rice, stirring in chopped tomato, herbs, and salt.

Sauté zucchini and squash in olive oil for 4–5 minutes until tender with light char.

Plate it up with salmon, rice, fries, and veggies—clean, colorful, and ready to smash.
