Instructions

Prepare the Onion Rings

  • Peel the onions and cut them into thick slices, approximately ½ inch thick.
  • Separate the slices into individual rings, keeping similarly sized rings together.
  • Choose pairs of rings where one fits inside the other, leaving a small gap between them for the filling.

Make the Jalapeño Popper Filling

  • In a mixing bowl, combine the softened cream cheese and shredded cheddar.
  • Add the diced jalapeños, crumbled bacon, garlic powder, smoked paprika, and black pepper.
  • Mix until everything is evenly incorporated and creamy.
  • Spoon the filling into the space between the paired onion rings.
  • Press gently to create an even layer, making sure the filling is contained within the rings.
  • Place the stuffed onion rings on a parchment-lined tray and freeze for 20–30 minutes to help the filling firm up.

Prepare the Breading Station

  • Place the flour in one shallow bowl.
  • In a second bowl, whisk together the eggs and milk.
  • In a third bowl, combine the panko breadcrumbs, paprika, garlic powder, and salt.

Coat the Stuffed Onion Rings

  • Remove the onion rings from the freezer.
  • Carefully coat each ring in flour, shaking off the excess.
  • Dip into the egg mixture, making sure all sides are covered.
  • Press into the seasoned breadcrumbs until completely coated.
  • For a thicker, crunchier crust, repeat the egg and breadcrumb coating once more.
  • Return the breaded rings to the freezer for another 10–15 minutes to help them hold their shape.

Fry Until Golden

  • Heat vegetable oil in a deep, heavy-bottomed pot to 350°F (175°C).
  • Carefully lower a few onion rings into the hot oil, avoiding overcrowding.
  • Fry for approximately 3–4 minutes, turning gently, until golden brown and crispy.
  • Remove with a slotted spoon and place on a wire rack or paper towel-lined plate.
  • Repeat with the remaining onion rings.

Serve Warm

  • Allow the onion rings to cool slightly before serving.
  • Garnish with chopped parsley or extra bacon if desired.
  • Serve warm with ranch dressing, spicy mayo, or your favorite dipping sauce.

Tips for the Best Jalapeño Popper Stuffed Onion Rings

  • Choose large onions:Thick, sturdy rings are easier to fill and hold their shape during frying.
  • Soften the cream cheese:This makes the filling easier to mix and spread.
  • Remove jalapeño seeds:For a milder flavor, remove the seeds and inner membranes.
  • Freeze before breading:Chilling helps prevent the cheese filling from leaking.
  • Double-coat for extra crunch:A second layer of egg and breadcrumbs creates a thicker, crispier coating.
  • Maintain the oil temperature:Keep the oil around 350°F to ensure the coating becomes golden without absorbing too much oil.
