 Honey Garlic Butter Roasted Carrots – Delicious and Easy

Ingredients

1 lb carrots, peeled and cut into even sizes
3 tbsp unsalted butter, melted
2 tbsp honey
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme (or fresh thyme for garnish)
1 tbsp chopped parsley (for garnish)

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, whisk together melted butter, honey, minced garlic, salt, black pepper, and thyme.
Toss the carrots in the honey garlic butter mixture until well coated.
Spread the carrots in a single layer on the baking sheet.
Roast for 20-25 minutes, tossing halfway through, until the carrots are tender and caramelized.
