1 lb ground beef
2 medium sweet potatoes, peeled and diced
1 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1 avocado, sliced
1 cup cottage cheese
2 tbsp green onions, chopped
2 tbsp balsamic glaze or sauce of choice
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
Spread the sweet potatoes on a baking sheet and roast for 20–25 minutes until tender and lightly caramelized.
While the potatoes roast, cook the ground beef in a skillet over medium heat until browned and fully cooked. Season with a pinch of salt and pepper.
Assemble the bowls by adding cooked ground beef and roasted sweet potatoes as the base.
Top with cottage cheese, sliced avocado, and chopped green onions.
Drizzle with balsamic glaze or your favorite sauce before serving.
