For the filling:
1 lb ground beef
1 small onion, finely chopped
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt (adjust to taste)
½ tsp black pepper
2 tbsp tomato paste or ketchup (optional, for tanginess)
½ cup shredded cheddar cheese
For the sandwiches:
8 slices of bread (sourdough, white, or your favorite)
4 tbsp butter, softened
4-8 slices of your favorite cheese (cheddar, mozzarella, or pepper jack)
1. Prepare the Ground Beef Mixture
Heat a skillet over medium heat. Add the ground beef and onions, cooking until the beef is browned and the onions are softened. Drain excess fat.
Stir in garlic powder, smoked paprika, salt, black pepper, and tomato paste (if using). Cook for another 2-3 minutes.
Remove from heat and let the mixture cool slightly. Stir in the shredded cheddar cheese.
2. Assemble the Sandwiches
Spread butter evenly on one side of each slice of bread.
Place a slice of bread, buttered side down, on a clean surface. Add a slice of cheese, followed by a generous spoonful of the ground beef mixture. Top with another slice of cheese and a second slice of bread, buttered side up.
3. Cook the Sandwiches
Heat a non-stick skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden and crispy, and the cheese is melted.
Repeat with the remaining sandwiches.
4. Serve
Slice each sandwich in half and serve hot, ideally with a side of tomato soup, pickles, or a simple salad.
Tips
Cheese Choices: Use multiple types of cheese for extra flavor—try gouda, Swiss, or even brie.
Add-ons: Include jalapeños, sautéed mushrooms, or crispy bacon for an elevated version.
