1/4 cup lemon juice, freshly squeezed
1/4 cup olive oil
4 garlic cloves, minced
2 tablespoons plain yogurt
2 teaspoons dried oregano
1 teaspoon salt, plus more to taste
1/4 teaspoon ground black pepper
8 bone-in, skin-on chicken thighs
4 ounces Feta cheese, cut into small cubes
1/2 cup small tomatoes (cherry or grape tomatoes)
1/2 cup Kalamata olives
Lemon slices for garnish (optional)
1. Combine lemon juice, olive oil, garlic, yogurt, oregano, salt, and pepper in a bowl or zip-top bag.
2. Add chicken thighs, ensuring they’re well-coated. Marinate for 15 minutes or up to 24 hours.
3. Preheat oven to 375°F. Place chicken skin side up in a skillet or baking dish, pouring the marinade over the top.
4. Bake for 20 minutes, then add Feta, tomatoes, and olives. Continue baking for 15-20 minutes until the chicken is fully cooked and golden brown.
5. Garnish with lemon slices and serve.
