  • 2garlic cloves, minced
  • 1/4 cupgrated Parmesan cheese
  • 1 tbspchopped fresh parsley
  • 1/2 cupshredded mozzarella, optional

Instructions

  1. Preheat the oven:Heat the oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Prepare the mixture:In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, garlic, milk, parsley, Italian seasoning, paprika, salt, pepper, and olive oil. Mix gently until everything is evenly combined, without overworking the meat.
  3. Shape the meatloaf:Transfer the mixture to the prepared pan or shape it into a loaf on the lined baking sheet. Smooth the top with your hands or a spatula.
  4. Make the garlic butter:Mix the melted butter with the minced garlic and half of the parsley. Brush half of this mixture over the meatloaf.
  5. Bake the meatloaf:Bake for 40–50 minutes, depending on its thickness, until the center reaches an internal temperature of 165°F (74°C).
  6. Add the cheesy topping:Mix the remaining garlic butter with the Parmesan. During the final 5–10 minutes of baking, brush it over the meatloaf and sprinkle with mozzarella if desired. Return to the oven until the cheese melts.
  7. Rest and serve:Let the meatloaf rest for 5–10 minutes before slicing. Garnish with the remaining parsley and serve warm with roasted potatoes, steamed vegetables, or a fresh salad.
