1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Wooden or metal skewers (if wooden, soak in water for 30 minutes)
For the Firecracker Sauce:
1/3 cup buffalo sauce
2 tablespoons brown sugar
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon apple cider vinegar
2 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes (optional, for more heat)
In a bowl, toss chicken cubes with olive oil, salt, pepper, and garlic powder. Let marinate for 15–30 minutes.
Meanwhile, whisk together all ingredients for the firecracker sauce in a small saucepan. Simmer over medium-low heat for 5–7 minutes, until slightly thickened. Set aside.
Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers.
Grill skewers 4–5 minutes per side, or until chicken is cooked through and slightly charred.
Brush or drizzle firecracker sauce over the skewers in the last 1–2 minutes of grilling, or toss cooked skewers in the sauce before serving.
Garnish with chopped green onions or sesame seeds if desired. Serve hot!
