Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper. In a bowl, mix the blended cottage cheese, egg, Parmesan, almond flour, and a little sweetener until smooth. Spoon small mounds of the mixture onto the tray. Bake for 12–15 minutes until the puffs turn golden and slightly crispy on the edges. Let them cool for a few minutes, then lightly dust with powdered sweetener if you want a dessert-style finish. Enjoy warm.
