For the roast:
2–3 lb beef roast (sirloin or chuck)
Salt & black pepper, to taste
1 tsp paprika
1 tbsp olive oil
For the potatoes:
1 lb baby potatoes
2 tbsp olive oil
Salt, pepper, and Italian seasoning
For the creamy garlic sauce:
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp Dijon mustard
½ tsp black pepper
Fresh chives, chopped
Prep & season
Preheat oven to 375°F. Season roast with salt, pepper, and paprika.
Sear the beef
Heat olive oil in a skillet and sear roast on all sides until browned.
Roast with potatoes
Place roast in a baking dish. Toss potatoes with olive oil and seasoning, then add around the roast. Roast for 1.5–2 hours or until desired doneness.
Make the creamy sauce
In a saucepan, melt butter and sauté garlic. Add heavy cream, Parmesan, Dijon mustard, and pepper. Simmer until thick and creamy.
Finish & serve
Let roast rest 10 minutes, then pour creamy garlic sauce over the top. Garnish with chives.
