2 cans wild tuna
¼ small red onion, finely diced
3 celery stalks, diced
¾ cup cucumber, chopped
2 tablespoons fresh parsley, finely chopped
2 avocados, pitted
2 tablespoons fresh lemon juice
2 ½ tablespoons avocado or extra virgin olive oil
Kosher salt to taste
Black pepper to taste
1. In a large salad bowl, combine tuna, red onion, celery, cucumber, parsley, and avocados.
2. Mash the avocado to your desired texture or mix it in directly.
3. Drizzle with olive oil, lemon juice, and season with salt and pepper. Stir well.
4. Taste and adjust seasoning if necessary. Serve immediately or store in the fridge for up to 5 days.
