Ingredients

Flatbread dough (free-sugar)
1 cup cottage cheese
1 cup all-purpose flour
1 large egg

1–2 tsp olive oil or butter (for the pan)
Steps to Create
Make the dough
Add cottage cheese, flour, and egg to a bowl. Mix until a shaggy dough forms.
Knead for 1–2 minutes until the dough becomes smoother (it may stay slightly tacky).
Shape
Divide dough into 4 equal pieces.
Lightly flour your counter and roll each piece into a thin round (about 6 inches wide).
Cook
Heat a nonstick skillet over medium heat and lightly grease.
Cook each flatbread 2–3 minutes per side, until golden spots appear and the center is cooked through.
Stack and cover with a clean towel to keep them soft and warm.
Tips & Tricks
If the dough feels too sticky, dust with a little extra flour while shaping.
If the flatbreads brown too quickly, lower the heat slightly.
Store airtight in the fridge up to 3 days; reheat in a dry skillet for best texture.
