This Chocolate M&M’s and Chip Cookie Dough Ice Cream Cake is fun, colorful, and loaded with chocolate, cookie dough, and creamy ice cream. Perfect for birthdays, summer parties, or dessert lovers!
1 cup all-purpose flour (heat-treated to be safe to eat raw)
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1 teaspoon vanilla extract
2 tablespoons milk
1/2 cup mini chocolate chips
1/3 cup M&M’s candies
1 quart (4 cups) vanilla ice cream, slightly softened
1/2 cup chocolate chips
1/3 cup M&M’s candies
1 cup whipped cream or whipped topping
1/4 cup chocolate syrup
Extra M&M’s and chocolate chips for garnish
In a bowl, cream together the butter and brown sugar until smooth and fluffy.
Add the vanilla extract and milk, mixing until well combined.
Gradually stir in the heat-treated flour.
Fold in the mini chocolate chips and M&M’s.
Press the cookie dough mixture evenly into the bottom of a lined springform pan.
Freeze for 20 minutes to firm up the base.
Remove the cookie dough base from the freezer.
Spread the slightly softened vanilla ice cream evenly over the cookie dough layer.
Sprinkle chocolate chips and additional M&M’s on top, gently pressing them into the ice cream.
Smooth the surface with a spatula.
Freeze for 3–4 hours, until completely firm.
Spread whipped cream evenly over the frozen ice cream layer.
Drizzle with chocolate syrup.
Decorate with extra M&M’s and chocolate chips.
Freeze again for 30 minutes before serving.
Serve
To cut clean slices, dip a knife in warm water before each cut.
Serve as is or with chocolate or caramel sauce for an extra indulgent dessert.
