1/2 cup(75 g) maraschino cherries, drained, patted dry, and chopped
1/4 teaspoonalmond extract (optional)
Extra chocolate chips for topping
Instructions
Prepare the Cookie Dough
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy.
Add the egg, vanilla extract, and almond extract if using. Mix until smooth and fully combined.
In a separate bowl, whisk together the flour, baking soda, salt, and cornstarch.
Gradually add the dry ingredients to the wet mixture, mixing just until a soft cookie dough forms.
Gently fold in the chocolate chips and chopped cherries.
Cover the bowl and refrigerate the dough for 30 minutes to help prevent the cookies from spreading too much.
Shape and Bake
Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
Scoop approximately 2 tablespoons of dough for each cookie and roll into balls.
Arrange the dough balls on the baking sheets, leaving about 2 inches between them.
Press a few extra chocolate chips onto the tops for a bakery-style appearance.
Bake for 10–12 minutes, until the edges are lightly golden and the centers still look slightly soft.
Remove from the oven and let the cookies rest on the baking sheet for 5 minutes.
Transfer to a wire rack and allow them to cool completely.
