Instructions

1. Heat 1 tbsp butter in a pan over medium heat
2. Whisk 2 eggs, salt, and pepper, pour into pan
3. As eggs start setting, add cooked veggies (bell peppers, onions, mushrooms), diced ham, and 1/4 cup grated cheese on one half
4. Fold other half over, cook until cheese melts (1-2 mins)
