3 medium zucchinis, sliced lengthwise into 1/2-inch “steaks”
3 tbsp olive oil
4 garlic cloves, minced
1 tsp dried oregano
Salt and pepper to taste
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tbsp chopped fresh parsley (optional)
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Lay zucchini slices flat on the baking sheet.
In a small bowl, mix olive oil, minced garlic, oregano, salt, and pepper.
Brush both sides of zucchini slices with the garlic oil mixture.
Roast in the oven for 12–15 minutes, until tender.
Remove from oven and sprinkle mozzarella and Parmesan evenly over the zucchini steaks.
Return to oven and broil for 2–3 minutes, until the cheese is melted and golden.
Garnish with parsley if desired and serve hot.
Notes: Serve as a vegetarian side dish or top with grilled chicken for a main course.
