For the shrimp:
1 lb large shrimp, peeled & deveined
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
2 tbsp olive oil
3 garlic cloves, minced
For the casserole:
3 cups cooked pasta (elbow or shells)
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk (warm)
1 1/2 cups shredded cheddar cheese
1/2 cup mozzarella cheese
1/4 cup grated Parmesan
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 cup diced tomatoes (optional)
For the topping:
1/2 cup breadcrumbs
2 tbsp melted butter
2 tbsp chopped parsley
Cook the shrimp:
Heat olive oil in a skillet over medium heat. Add garlic and sauté briefly, then add shrimp. Season with salt, pepper, and paprika. Cook 2–3 minutes per side until pink. Set aside.
Make the cheese sauce:
In a saucepan, melt butter over medium heat. Stir in flour and cook 1 minute. Gradually whisk in warm milk until smooth and thickened.
Add the cheese:
Lower heat and stir in cheddar, mozzarella, and Parmesan. Season with salt, pepper, and garlic powder. Mix until creamy.
Assemble:
Combine cooked pasta with cheese sauce and diced tomatoes. Pour into a greased baking dish. Top with shrimp evenly.
Add topping:
Mix breadcrumbs with melted butter and sprinkle over the casserole.
Bake:
Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden on top.
Finish & serve:
Sprinkle fresh parsley before serving. Serve hot and enjoy!
