Sandwiches:
8 slices sourdough or rustic bread
4 tablespoons butter, softened

6 oz fresh mozzarella, sliced

4 oz feta cheese, crumbled
(115 g)
1/2 cup sun-dried tomatoes, chopped
(80 g)
1/3 cup Kalamata olives, sliced
(50 g)
1 teaspoon dried oregano
(1 g)
Optional Add-Ins:
Fresh basil leaves or baby spinach
Butter one side of each bread slice.
Layer mozzarella, feta, sun-dried tomatoes, olives, oregano, and basil on the unbuttered sides. Top with remaining bread.
Cook in a skillet over medium heat 3–4 minutes per side until golden and cheese is melted.
Slice and serve warm.
