Ingredients

For the Salad:

1 cup fresh blueberries

2 ripe peaches, thinly sliced

1 Persian cucumber, thinly sliced

1/4 cup crumbled feta cheese

2 tbsp fresh basil leaves, chopped (plus extra for garnish)

For the Honey-Lemon Vinaigrette:

2 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp honey

1/4 tsp Dijon mustard (optional, for extra tang)

Salt and pepper, to taste

Instructions

1. Prepare the Vinaigrette:

In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard (if using), salt, and pepper. Adjust seasoning to taste.

2. Assemble the Salad:

In a large bowl, combine blueberries, peach slices, cucumber slices, and crumbled feta cheese. Toss gently to mix.

3. Dress the Salad:

Drizzle the honey-lemon vinaigrette over the salad and toss lightly to coat all ingredients evenly.

4. Garnish and Serve:

Transfer the salad to a serving bowl or platter. Garnish with chopped basil leaves and a few whole blueberries and peach slices for presentation.

Tips:

Add a handful of arugula or mixed greens for a heartier version.

Sprinkle with toasted almonds or walnuts for added crunch.
