1 lb ground chicken
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 egg
2 garlic cloves, minced
1 tablespoon Italian seasoning
1/4 cup fresh parsley, chopped
1/4 teaspoon red pepper flakes (optional, for a bit of heat)
Salt and pepper, to taste
1/2 cup shredded mozzarella cheese (for topping)
2 tablespoons olive oil (for brushing)

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup.
Prepare the Meatloaf Mixture:

In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, chopped parsley, red pepper flakes (if using), salt, and pepper. Mix until all the ingredients are thoroughly combined.
Shape the Meatloaves:

Divide the mixture into four equal portions and shape each portion into an individual mini meatloaf. Place the meatloaves onto the prepared baking sheet, leaving some space between each one.
Bake the Meatloaves:

Lightly brush the tops of the meatloaves with olive oil to help them achieve a golden-brown color during baking.
Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Add the Cheese Topping:

Remove the meatloaves from the oven and top each one with shredded mozzarella cheese. Return the meatloaves to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve:

Garnish the meatloaves with extra chopped parsley for a fresh pop of color. Serve hot alongside your favorite sides such as mashed potatoes, roasted vegetables, or a crisp salad.
