BACON-&-EGG-SALAD LETTUCE-WRAPS

Ingredients

  • 4 large romaine or butter lettuce leaves
  • 4 hard-boiled eggs, chopped
  • 2-3 slices cooked bacon, crumbled
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons light mayonnaise or Greek yogurt
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste
  • Paprika or black pepper for garnish

Instructions

  • Prepare the egg salad: In a bowl, mix chopped hard-boiled eggs, diced celery, red onion, mayonnaise (or Greek yogurt), Dijon mustard, salt, and pepper until combined.
  • Assemble the wraps: Place a lettuce leaf on a plate. Spoon a generous amount of egg salad into each leaf.
  • Add toppings: Sprinkle crumbled bacon and cherry tomato halves on top.
  • Garnish: Sprinkle with paprika or extra black pepper for some extra flavor.
