1 pound bacon, chopped
1 cucumber, diced
1 cup quartered cherry tomatoes
¼ cup seasoned rice vinegar
Salt and ground black pepper to taste
5 avocados, peeled, pitted, and diced
½ cup chopped fresh cilantro
4 green onions, chopped
1. In a skillet, cook chopped bacon over medium-high heat until crispy (about 10 minutes). Drain on paper towels.
2. In a large bowl, combine cucumber, tomatoes, and rice vinegar. Season with salt and pepper.
