1. Preheat the oven to 350°F (175°C).
2. In a large saucepan, combine the sliced apples, brown sugar, cinnamon, nutmeg, and water. Cook over medium heat until the apples are soft, about 10 minutes. Set aside.
3. Cook the lasagna noodles according to the package instructions. Drain and set aside.
4. In a small bowl, mix the vegan ricotta cheese with chopped walnuts and maple syrup.
5. In a separate saucepan, melt the vegan butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
6. Slowly whisk in the plant-based milk until the sauce thickens. Add salt and remove from heat.
7. To assemble the lasagna, spread a thin layer of the white sauce on the bottom of a baking dish. Layer with lasagna noodles, apple mixture, ricotta mixture, and white sauce. Repeat the layers until all ingredients are used, ending with a layer of white sauce on top.
8. Sprinkle raisins on the top layer.
9. Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes until bubbly.
10. Let the lasagna cool slightly before serving. Enjoy your delicious vegan Apples Lasagna!
