Keto Cottage Cheese Breakfast Muffins

Ingredients

1 cup full-fat cottage cheese
2 large eggs
1 cup almond flour
1/2 cup shredded cheddar cheese
1/4 cup melted butter
1 tsp baking powder
1/2 tsp garlic powder
Salt and pepper to taste
Fresh herbs (optional: parsley, chives)

Instructions

Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a bowl, whisk together eggs, cottage cheese, and melted butter.
Stir in almond flour, baking powder, garlic powder, salt, and pepper.
Fold in shredded cheddar cheese and any herbs you desire.
Pour the mixture evenly into the muffin tin (about 6 muffins).
Bake for 20-25 minutes, or until golden and firm to the touch.
