Imagine warm tortillas, fluffy potatoes, melty cheese, and the delightful crunch of tater tots – all wrapped up for pure comfort! This recipe is designed to be super easy, so let’s get cooking!

Ingredients

* 1 bag (about 16 oz) frozen tater tots
* 2 medium potatoes, peeled and diced into small ½-inch cubes
* 1 tablespoon olive oil (or your favorite cooking oil)
* ½ teaspoon salt (or to taste)
* ¼ teaspoon black pepper (or to taste)
* 1 teaspoon garlic powder
* 1 teaspoon onion powder
* 1 ½ cups shredded cheddar cheese (or a blend of your favorites!)
* 6-8 medium flour tortillas (about 8-inch size)
* Optional toppings: sour cream, salsa, chopped chives or parsley

1. **Get those Tater Tots Crispy!** Preheat your oven to 400°F (200°C). Spread the frozen tater tots on a baking sheet in a single layer. Bake for 20-25 minutes, or until they are golden brown and wonderfully crispy. Give them a shake halfway through for even cooking.
2. **Cook the Potatoes:** While the tots are baking, heat the olive oil in a medium skillet over medium heat. Add the diced potatoes, salt, pepper, garlic powder, and onion powder. Stir to coat the potatoes evenly.
3. **Make them Tender:** Cover the skillet and let the potatoes cook for about 10-15 minutes, stirring occasionally, until they are fork-tender. You want them soft enough to mash slightly.
4. **Mash and Mix:** Once the potatoes are tender, use the back of your spoon or a fork to gently mash about half of the potatoes in the skillet. This will help create a creamy filling. Stir in about half of the shredded cheese until it starts to melt and create a lovely cheesy mixture.
5. **Warm the Tortillas:** While the potato mixture is still warm, warm up your tortillas. You can do this one by one in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for about 30-60 seconds until they are soft and pliable.
6. **Assemble Your Burritos!** Lay a warm tortilla flat. Spoon a generous amount of the cheesy potato mixture down the center. Top with a handful of your crispy tater tots and a sprinkle of the remaining shredded cheese.
7. **Fold it Up:** Fold in the sides of the tortilla, then roll it up tightly from the bottom.
