Ingredients

For the Salmon Meatballs
1 pound salmon fillet, skin removed and finely chopped
½ cup panko breadcrumbs
1 large egg
2 garlic cloves, minced
1 tablespoon fresh dill, finely chopped
1 tablespoon fresh parsley, finely chopped
1 teaspoon Dijon mustard
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice
For the Creamy Avocado Sauce
1 ripe avocado
¼ cup plain Greek yogurt
1 garlic clove
1 tablespoon fresh lime juice
1 tablespoon olive oil
Salt, to taste
Freshly ground black pepper, to taste

Instructions

How to Make It:
1. Prepare the Salmon Mixture:
Preheat the oven to 400°F and line a baking sheet with parchment paper. In a mixing bowl, combine salmon, panko, egg, garlic, dill, parsley, Dijon mustard, salt, pepper, and lemon juice. Mix gently until just incorporated.
2. Shape the Meatballs:
Using a tablespoon, portion the mixture and roll into 1 to 1½ inch meatballs. Arrange evenly on the prepared baking sheet, spacing slightly apart.
3. Bake the Meatballs:
Transfer to the oven and bake for 15 to 18 minutes until lightly golden and just cooked through. The interior should remain moist and tender.
4. Prepare the Avocado Sauce:
While the meatballs bake, combine avocado, Greek yogurt, garlic, lime juice, olive oil, salt, and black pepper in a blender. Blend until completely smooth and creamy. Adjust seasoning to taste.
5. Finish and Serve:
Arrange the salmon meatballs on a serving platter. Drizzle with avocado sauce or serve alongside for dipping. Garnish with additional fresh herbs or a light squeeze of lime.
