4 slices rustic bread
1 tbsp (15 ml) olive oil
For the Topping
1 cup (200 g) cottage cheese
1 ripe avocado
1 cup cherry tomatoes, sliced
1 tsp lemon juice
Pinch of salt
Black pepper
For the Hot Honey
2 tbsp (30 ml) honey
1 tsp chili flakes
½ tsp apple cider vinegar
Garnish
Extra chili flakes
Fresh herbs (parsley or basil)
Instructions
Toast bread slices until golden and crispy, brushing lightly with olive oil.
In a bowl, lightly mash avocado with lemon juice, salt, and pepper.
In a small pan, warm honey with chili flakes and apple cider vinegar for 1–2 minutes.
Spread cottage cheese evenly over the toast.
Top with smashed avocado.
Add sliced tomatoes.
Drizzle hot honey over the top.
Sprinkle chili flakes and fresh herbs.
Serve immediately.
