  • 2 tbsp fresh coriander or parsley
  • ½ cucumber, diced

Optional Sauce

  • Greek yoghurt or mayo (2–3 tbsp)

  • Chili flakes or hot sauce

Prepare the Shrimp

In a bowl, season shrimp with:

  • Minced garlic
  • Paprika
  • Salt
  • Black pepper
  • Lemon juice

Mix until evenly coated.

 Heat the Pan

Place a skillet over medium-high heat.

Sear the Shrimp

Cook shrimp for 1–2 minutes per side until:

  • Pink and opaque

This helps them sit neatly inside the avocado.

Prepare the Avocados

Cut avocados in half and remove the pits.

This enhances flavour and prevents browning.

Make the Filling Mixture

In a bowl, combine:

  • Optional yogurt or mayo sauce

Mix gently to keep texture intact.

Stuff the Avocados

Spoon the shrimp mixture into each avocado half.

Fill generously so it sits slightly above the surface.

Add Final Drizzle

Top with:

  • Extra lemon juice
  • Chili flakes or hot sauce (optional)
  • Fresh herbs

This adds brightness and heat.
